2 medium-sized russet potatoes, peeled and diced

4 large eggs

1 cup shredded cheddar cheese

1/4 cup milk (or heavy cream for a richer taste)

1/2 cup diced bell peppers (any color)

1/4 cup finely chopped onion

2 tablespoons olive oil or butter

Instructions

Cook Potatoes: In a medium pot, add diced potatoes and cover them with water. Bring to a boil, then simmer for about 8-10 minutes until fork-tender. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat olive oil (or butter) over medium heat. Add the diced onions and bell peppers. Sauté for about 3-4 minutes until they are softened.

      Combine Potatoes: Add the cooked potatoes to the skillet. Toss them with the sautéed vegetables and cook for another 5 minutes, allowing them to slightly brown.
