4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup cream cheese, softened

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon lemon zest

Salt and pepper to taste

1 tablespoon olive oil

1/2 cup breadcrumbs (optional for topping)

Fresh parsley for garnish (optional)

Instructions

Preheat your oven to 375°F (190°C).

    Prepare the filling: In a medium bowl, combine the chopped spinach, feta cheese, cream cheese, minced garlic, oregano, lemon zest, salt, and pepper. Mix well until all ingredients are thoroughly combined.

      Prepare the chicken breasts: Place each chicken breast on a clean cutting board. Using a sharp knife, make a pocket in each breast by slicing it horizontally, but not cutting all the way through.

        Stuff the chicken: Generously fill each chicken pocket with the spinach and feta mixture. You can use toothpicks to secure the openings if needed to prevent the filling from leaking out during cooking.

          Season the chicken: Rub the chicken breasts with olive oil and season them with additional salt, pepper, and any preferred herbs.
