Ingredients

1/2 cup coconut flour

1/4 teaspoon salt

1 teaspoon baking powder

1 tablespoon sweetener (honey, maple syrup, or coconut sugar)

4 large eggs

1 cup unsweetened almond milk (or any milk of your choice)

2 tablespoons melted coconut oil (plus extra for cooking)

1 teaspoon vanilla extract

Fresh fruit, shredded coconut, or nuts for topping (optional)

Instructions

In a mixing bowl, sift together the coconut flour, salt, and baking powder. Whisk until well combined and free of lumps.

    In another bowl, beat the eggs. Then add in the almond milk, melted coconut oil, vanilla extract, and sweetener. Mix until thoroughly blended.

      Gradually add the wet ingredients to the dry coconut flour mixture, stirring until just combined. The batter will be thick; allow it to sit for about 5-10 minutes to thicken further.

        Heat a non-stick skillet or griddle over medium heat and add a little coconut oil to coat the surface.

          Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

            Carefully flip the pancakes and cook for another 2-3 minutes or until golden brown and cooked through.

              Remove from the skillet and keep warm while you repeat with the remaining batter.

                Serve warm with your favorite toppings such as fresh fruit, shredded coconut, or nuts. Drizzle with additional syrup if desired.
