Ingredients

1 cup whole wheat flour

1/2 cup rolled oats

1/4 cup plant-based protein powder (vanilla or plain)

2 tbsp baking powder

1/2 tsp salt

1 1/4 cups almond milk (or any plant-based milk)

1 ripe banana, mashed

2 tbsp maple syrup (or agave syrup)

1 tsp vanilla extract

1/4 cup coconut oil, melted (plus extra for greasing)

Optional toppings: fresh fruits, nut butter, maple syrup, or vegan yogurt

Instructions

In a large bowl, whisk together the whole wheat flour, rolled oats, plant-based protein powder, baking powder, and salt until well combined.

    In a separate bowl, mix the almond milk, mashed banana, maple syrup, vanilla extract, and melted coconut oil until thoroughly blended.

      Pour the wet ingredients into the dry ingredients and stir just until combined. Avoid overmixing; a few lumps are okay for fluffy waffles.

        Preheat your waffle iron according to the manufacturer's instructions and lightly grease it with coconut oil.

          Pour an appropriate amount of batter into the preheated waffle iron (about 1/3 to 1/2 cup, depending on the size of your waffle iron). Close the lid and cook until the waffles are golden and crispy, about 5-7 minutes.

            Carefully remove the waffles and keep them warm while you repeat with the remaining batter.

              Serve your waffles topped with your favorite toppings like fresh fruits, a dollop of nut butter, maple syrup, or a scoop of vegan yogurt.
