Ingredients

3 cups all-purpose flour

1 cup dill pickle juice

1/2 cup chopped dill pickles (preferably kosher dill)

1/4 cup granulated sugar

2 tablespoons olive oil

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon dried dill weed

1/2 teaspoon black pepper

1/2 cup shredded cheddar cheese (optional for added flavor)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal later.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, dried dill weed, and black pepper until well combined.

      Combine Wet Ingredients: In a separate bowl, mix together the dill pickle juice, olive oil, and chopped dill pickles until well incorporated.

        Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and gently stir until just combined. If you’re using shredded cheddar cheese, fold it in at this stage. Avoid overmixing; it’s okay if the batter is slightly lumpy.

          Transfer to Loaf Pan: Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

            Bake: Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

              Cool: Once baked, remove the loaf from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer to a wire rack to cool completely.
