Ingredients

For the pastry:

3 cups all-purpose flour

1 tsp salt

1 tsp turmeric powder (for color and flavor)

1/2 cup unsalted butter, chilled and cubed

1/4 cup shortening, chilled

1/4 cup ice water (more if needed)

For the beef filling:

1 lb ground beef

1 small onion, finely chopped

2 garlic cloves, minced

1/2 Scotch bonnet pepper, finely chopped (adjust for spice level)

1/2 tsp allspice

1 tsp thyme (dried or fresh)

1 tsp soy sauce

Salt and black pepper to taste

1/4 cup beef broth or water

2 green onions, finely sliced

1 egg, beaten (for egg wash)

Instructions

Make the pastry: In a large mixing bowl, combine the flour, salt, and turmeric powder. Add the chilled butter and shortening. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs. Gradually add the ice water, mixing until a dough forms. Divide the dough into two equal parts, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Prepare the filling: In a skillet over medium heat, sauté the chopped onion and garlic until fragrant and translucent, about 3-4 minutes. Add the ground beef and cook until browned. Drain excess fat if necessary.

      Season the beef: Stir in the Scotch bonnet pepper, allspice, thyme, soy sauce, salt, and black pepper. Pour in the beef broth and let it simmer for about 5-7 minutes until the mixture thickens. Fold in the sliced green onions and remove from heat. Allow to cool.

        Assemble the patties: Preheat your oven to 400°F (200°C). Take the chilled dough out of the fridge and roll out one disc on a lightly floured surface until about 1/8-inch thick. Cut out circles (about 6 inches in diameter) using a round cutter. Repeat with the second disc.

          Fill the patties: Place a spoonful of the beef filling in the center of each dough circle, ensuring not to overfill. Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal. Repeat with all remaining dough and filling.

            Egg wash: Place the patties on a parchment-lined baking sheet. Brush the tops of each patty with the beaten egg for a golden finish.

              Bake: Bake in the preheated oven for 25-30 minutes, or until the patties are golden brown. Remove and let cool slightly before serving.
