Ingredients

4 boneless, skinless chicken thighs

1 cup uncooked basmati rice

2 cups chicken broth

1 cup Greek yogurt

1 medium cucumber, grated

2 cloves garlic, minced

Juice of 1 lemon

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon olive oil

Salt and pepper to taste

Cherry tomatoes, halved (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 375°F (190°C).

    In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, olive oil, salt, and pepper. Stir well to create the tzatziki sauce.

      In a large baking dish, spread uncooked basmati rice evenly across the bottom.

        Place the chicken thighs on top of the rice and season with salt and pepper.

          Pour the chicken broth over the rice and chicken, ensuring the rice is fully submerged.

            Spoon half of the prepared tzatziki sauce over the chicken thighs, reserving the other half for serving.

              Cover the baking dish with aluminum foil and bake in the preheated oven for 35-40 minutes.

                Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the rice is tender and fluffy.

                  Once done, let it rest for 5 minutes before serving.

                    Serve the chicken and rice warm, drizzled with reserved tzatziki sauce and garnished with cherry tomatoes and chopped parsley.
