Ingredients

2 large English cucumbers

1 teaspoon salt

3 tablespoons rice vinegar

2 tablespoons soy sauce (low sodium preferred)

1 tablespoon sesame oil

1 tablespoon sugar or honey

1 teaspoon freshly grated ginger

1 clove garlic, minced

1 tablespoon sesame seeds (toasted)

2 green onions, finely sliced

1 small handful of fresh cilantro, chopped (optional)

Red pepper flakes (to taste, optional)

Instructions

Prep the Cucumbers: Start by washing the cucumbers. Then slice them thinly using a mandolin or a sharp knife. If the skin is thick, you can peel them into stripes for aesthetic purposes.

    Salt the Cucumbers: In a large bowl, combine the sliced cucumbers with 1 teaspoon of salt. Toss well and let them sit for about 15-20 minutes. This will help draw out excess moisture and enhance the flavor.

      Make the Dressing: In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar (or honey), grated ginger, and minced garlic until well combined.

        Rinse and Drain: After the cucumbers have released moisture, rinse them under cold water to remove excess salt. Drain well and pat dry with a paper towel.

          Combine Ingredients: In a large mixing bowl, add the drained cucumbers, dressing, sesame seeds, sliced green onions, and chopped cilantro (if using). Toss everything together until the cucumbers are evenly coated.
