1 cup rolled oats

1/2 cup whole wheat flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon cinnamon

1/4 cup honey or maple syrup

1/4 cup unsweetened applesauce

1/4 cup almond butter (or any nut butter of choice)

1 teaspoon vanilla extract

1 cup fresh or frozen blueberries

1/4 cup chopped nuts (optional, for extra crunch)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large bowl, combine rolled oats, whole wheat flour, baking powder, baking soda, salt, and cinnamon. Whisk until well incorporated.

      Mix Wet Ingredients: In another bowl, whisk together honey (or maple syrup), applesauce, almond butter, and vanilla extract until smooth and well combined.

        Combine Ingredients: Pour the wet mixture into the dry ingredients and mix until just combined. Gently fold in the blueberries and chopped nuts, if using.

          Shape Cookies: Using a spoon or cookie scoop, drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly with the back of the spoon.

            Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the cookies are set.

              Cool Down: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
