Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

2 teaspoons chipotle powder

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup cooked rice (white or brown)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup shredded cheddar cheese

1 cup romaine lettuce, chopped

1/2 cup diced tomatoes

1/4 cup chopped fresh cilantro

1/2 cup ranch dressing

4 large flour tortillas

Instructions

Marinate the Chicken: In a bowl, combine olive oil with chipotle powder, garlic powder, onion powder, smoked paprika, salt, and pepper. Coat the chicken breasts in the mixture, cover, and let marinate for at least 30 minutes (or up to 2 hours in the fridge).

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side until fully cooked (internal temperature should reach 165°F). Remove from grill and let rest for 5 minutes before slicing.

      Prepare the Burrito Filling: In a large bowl, mix the cooked rice, black beans, corn, shredded cheese, diced tomatoes, and chopped cilantro. Drizzle with ranch dressing (add more if you like it extra saucy) and mix until well combined.

        Assemble the Burrito: Take a flour tortilla and place a generous scoop of the filling in the center. Top the filling with sliced grilled chicken and a handful of chopped romaine lettuce.

          Wrap the Burrito: Fold in the sides of the tortilla, then roll from the bottom up to secure the filling. Repeat with the remaining tortillas.

            Grill the Burritos (optional): If desired, grill the burritos for an additional 2-3 minutes on each side to create a crispy outer layer.

              Serve: Slice the burritos in half and serve with extra ranch dressing or your favorite salsa on the side.
