Ingredients

2 boneless, skinless chicken breasts

1 cup chipotle ranch dressing (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

4 large flour tortillas

1 cup cooked rice (white or brown)

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheese (cheddar or Mexican blend)

1 cup romaine lettuce, shredded

1 tomato, diced

Lime wedges for serving

Instructions

Prepare the Chicken:

    - In a medium bowl, marinate the chicken breasts with olive oil, chipotle ranch dressing, garlic powder, onion powder, smoked paprika, salt, and pepper. Let it marinate for at least 30 minutes in the refrigerator (or up to 2 hours for a deeper flavor).

      Grill the Chicken:

        - Preheat the grill or a grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Once cooked, let the chicken rest for 5 minutes before slicing into bite-sized pieces.

          Assemble the Burrito:

            - Lay a large tortilla flat on a clean surface. Start layering the cooked rice, black beans, corn, grilled chicken pieces, shredded cheese, diced tomatoes, and shredded lettuce in the center of the tortilla.

              Wrap the Burrito:

                - Fold in the sides of the tortilla and then roll it up from the bottom, tucking in the filling as you go. Make sure to wrap it tightly to hold all the ingredients together.

                  Toast the Burrito (Optional):

                    - For an added crunch, you can grill the wrapped burrito on a skillet with a little bit of oil for 2-3 minutes on each side until golden brown.

                      Serve:

                        - Slice the burrito in half and serve with lime wedges on the side. Add additional chipotle ranch dressing for dipping, if desired.
