Ingredients

  • 3 large ripe bananas thoroughly mashed
  • cup unsalted butter melted
  • 1 teaspoon pure vanilla extract
  • 1 cup granulated sugar
  • 1 large egg beaten
  • 1 teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • 1 ½ cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • ½ cup packed brown sugar
  • ¼ cup chopped walnuts optional

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  • In a large bowl, combine the mashed bananas with the melted butter until smooth.
  • Add the vanilla extract and beaten egg, stirring until fully incorporated.
  • Mix in the granulated sugar, baking soda, and sea salt until combined.
  • Gradually add the all-purpose flour, stirring gently until just incorporated.
  • In a small bowl, mix the packed brown sugar and ground cinnamon.
  • Pour half of the batter into the loaf pan and sprinkle half of the cinnamon-sugar mixture on top.
  • Add the remaining batter and top with the rest of the cinnamon-sugar mixture.
  • Swirl the cinnamon mixture into the batter with a knife or skewer.
  • Sprinkle walnuts on top if desired and bake for 60-65 minutes until a toothpick comes out clean.

Notes

For a richer flavor, consider adding chopped walnuts on top.
