Ingredients

2 ¾ cups sweetened shredded coconut

2/3 cup sweetened condensed milk

1 teaspoon vanilla extract

2 large egg whites

1/4 teaspoon salt

1/2 cup semi-sweet chocolate chips (optional, for dipping)

Instructions

Preheat the Oven: Begin by preheating your oven to 325°F (160°C). Line a baking sheet with parchment paper.

Mix Coconut Base: In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Stir until all ingredients are well incorporated.

Beat Egg Whites: In another bowl, whisk the egg whites and salt with an electric mixer on medium speed until they form stiff peaks. This should take about 3-4 minutes.

Fold Together: Gently fold the beaten egg whites into the coconut mixture until fully combined. Be careful not to deflate the egg whites too much - you want to maintain some fluffiness.

Shape Macaroons: Using a cookie scoop or two tablespoons, drop mounds of the mixture onto the prepared baking sheet. Space them about an inch apart.

Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the macaroons are golden brown on the tops.

Cool Down: Once baked, remove the macaroons from the oven and let them cool on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely.

Optional Chocolate Dip: If desired, melt the chocolate chips in a microwave-safe bowl or over a double boiler. Dip the bottom of each macaroon into the melted chocolate and return to the wire rack. Let the chocolate set completely.

Enjoy your delightful coconut macaroons with a cup of tea or as a sweet treat at any time!
