12 oz linguine pasta

2 tbsp olive oil

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

4 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust for spice preference)

Salt and pepper to taste

1 cup unsalted butter (2 sticks), melted

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

1/4 cup grated Parmesan cheese

Juice of 1 lemon

Instructions

Cook Linguine: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Sauté Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken thighs, season with salt, pepper, smoked paprika, and cayenne pepper. Cook for about 5-7 minutes, or until the chicken is golden and cooked through.

      Add Garlic: Stir in the minced garlic and cook for an additional 30 seconds, until fragrant.

        Prepare Cowboy Butter Sauce: Reduce the heat to low and pour in the melted butter. Add the cherry tomatoes and gently toss to combine, allowing the tomatoes to soften for about 2-3 minutes.
