Ingredients

1 lb (450g) boneless chicken thighs, cut into 1-inch cubes

2 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon brown sugar

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon lime juice

1 tablespoon sesame oil

½ teaspoon black pepper

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

For the Peanut Sauce:

1/2 cup creamy peanut butter

3 tablespoons soy sauce

2 tablespoons lime juice

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

1-2 teaspoons sriracha or chili sauce (adjust to taste)

1/4 cup coconut milk (or water for thinning)

Instructions

Marinate the Chicken: In a large bowl, whisk together soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, lime juice, sesame oil, and black pepper. Add the chicken pieces and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.

    Prepare the Peanut Sauce: In a medium bowl, whisk together peanut butter, soy sauce, lime juice, honey (or maple syrup), sesame oil, sriracha (if using), and coconut milk until smooth. Adjust the consistency with additional coconut milk or water as needed. Taste and adjust seasoning if necessary. Set aside.

      Prepare the Skewers: If using wooden skewers, ensure they are soaked in water for at least 30 minutes before use to prevent burning. Thread the marinated chicken onto skewers, leaving a little space between each piece for even cooking.

        Grill the Skewers: Preheat your grill (or a grill pan) over medium-high heat. Lightly oil the grill grates. Place the skewers on the grill and cook for 9-12 minutes, turning occasionally, until the chicken is charred and cooked through (internal temperature should reach 165°F/75°C).

          Serve: Remove the skewers from the grill and let them rest for a few minutes. Serve warm with the peanut sauce drizzled on top or on the side for dipping. Garnish with chopped fresh cilantro and lime wedges if desired.
