Ingredients

For the Chicken Skewers:

1 pound boneless, skinless chicken thighs (cut into 1-inch pieces)

3 tablespoons soy sauce

2 tablespoons fish sauce

2 tablespoons brown sugar

2 cloves garlic (minced)

1 tablespoon ginger (grated)

1 tablespoon lime juice

1 tablespoon vegetable oil

1 teaspoon red chili flakes (optional)

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon honey or maple syrup

1 teaspoon sriracha (or to taste)

1 clove garlic (minced)

Chopped peanuts and cilantro (for garnish)

Instructions

Marinate the Chicken: In a large bowl, combine soy sauce, fish sauce, brown sugar, garlic, ginger, lime juice, vegetable oil, and red chili flakes. Add the chicken pieces and stir to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Peanut Sauce: In a separate bowl, whisk together the peanut butter, coconut milk, soy sauce, lime juice, honey (or maple syrup), sriracha, and garlic until smooth and well combined. Adjust the spice level to your preference by adding more sriracha. Set aside.

      Skewering the Chicken: If using bamboo skewers, ensure they are soaked in water to prevent burning. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

        Preheat the Grill: Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.

          Grill the Skewers: Place the skewers on the grill and cook for 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F).
