Ingredients

1 lb (450g) chicken breast, cut into 1-inch cubes

2 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon brown sugar

1 tablespoon lime juice

2 garlic cloves, minced

1 teaspoon ground ginger

½ teaspoon crushed red pepper flakes (optional)

8 wooden or metal skewers

For the Peanut Sauce:

½ cup creamy peanut butter

2 tablespoons soy sauce

2 tablespoons lime juice

1 tablespoon honey or maple syrup

1 tablespoon sriracha (adjust for spice preference)

2-3 tablespoons warm water (to thin the sauce)

Instructions

Marinate the Chicken: In a mixing bowl, combine soy sauce, fish sauce, brown sugar, lime juice, minced garlic, ground ginger, and crushed red pepper flakes. Add the chicken cubes and ensure they are evenly coated in the marinade. Cover and refrigerate for at least 30 minutes, up to 2 hours for maximum flavor.

    Prepare the Peanut Sauce: In a separate bowl, mix together the peanut butter, soy sauce, lime juice, honey, and sriracha. Slowly add warm water, one tablespoon at a time, stirring until the sauce reaches a smooth, pourable consistency. Adjust seasoning to taste. Set aside.

      Skewer the Chicken: Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes before threading to prevent burning. Thread the marinated chicken pieces onto the skewers, packing them tightly but allowing space for even cooking.

        Grill the Chicken Skewers: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks (internal temperature should reach 165°F or 75°C).
