Ingredients

4 boneless, skinless chicken thighs

4 medium potatoes, diced into 1-inch cubes

1 cup cherry tomatoes, halved

1 medium onion, chopped

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

3 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Juice of 1 lemon

Instructions

Preheat Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare Ingredients: In a large bowl, combine the diced potatoes, cherry tomatoes, and onion. Add 2 tablespoons of olive oil, oregano, basil, garlic powder, and season with salt and pepper. Toss until everything is evenly coated.

      Season Chicken: In another bowl, drizzle the chicken thighs with the remaining olive oil and season with salt, pepper, and the red pepper flakes if using. Rub the spices into the chicken for enhanced flavor.

        Arrange in Baking Dish: In a large baking dish, add the seasoned potatoes and vegetable mixture. Nestle the chicken thighs on top of the potatoes.

          Add Garlic: Sprinkle the minced garlic evenly over the chicken and potatoes.

            Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the potatoes are tender.

              Finish with Lemon & Garnish: Once cooked, drizzle the juice of one lemon over the chicken and potatoes. Serve hot, garnished with fresh parsley.
