Ingredients

1/2 cup (100g) granulated sugar

2 large eggs

1/2 cup (120ml) freshly squeezed lemon juice (about 2-3 lemons)

Zest of 2 lemons

1/4 cup (60g) unsalted butter, cubed

A pinch of salt

Instructions

In a microwave-safe bowl, whisk together the granulated sugar and eggs until well combined.

    Add the lemon juice, lemon zest, and a pinch of salt to the mixture, stirring until smooth.

      Place the cubed butter into the mixture and microwave on high for 30 seconds. Remove and stir to incorporate the melted butter.

        Return the bowl to the microwave and repeat heating in 30-second intervals, stirring well after each interval. Keep heating until the mixture thickens, approximately 2 to 4 minutes total, depending on microwave wattage. Be cautious to prevent boiling.

          Once thickened, remove the bowl from the microwave and strain the curd through a fine mesh sieve into a clean container to remove any lumps or cooked egg bits.

            Allow the lemon curd to cool to room temperature before storing it in the refrigerator in an airtight container. It will thicken further as it cools.
