Easy One-Pot Lasagna Soup

Ingredients

1 lb (450g) ground beef or Italian sausage

1 medium onion, chopped

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups chicken or vegetable broth

8 oz uncooked lasagna noodles, broken into pieces

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

2 cups fresh spinach or kale

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil for garnish

Instructions

In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the ground beef or sausage and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.

    Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.

      Stir in the crushed tomatoes, chicken or vegetable broth, dried oregano, dried basil, red pepper flakes, salt, and pepper. Bring the mixture to a simmer.

        Add the broken lasagna noodles to the pot, stir well, and let it simmer for about 10-12 minutes, or until the noodles are cooked al dente.

          Stir in the fresh spinach or kale until wilted.

            In a separate bowl, combine the ricotta cheese with a pinch of salt and some black pepper.

              To serve, ladle the soup into bowls, adding a dollop of ricotta cheese on top of each serving. Sprinkle with shredded mozzarella and Parmesan cheese, and garnish with fresh basil.
