1 cup cottage cheese

1 cup whole wheat flour

1/2 cup rolled oats

1/4 cup grated Parmesan cheese

1/2 cup chopped spinach (fresh or frozen, thawed and drained)

1/2 cup diced bell peppers (red or green)

2 large eggs

1/4 cup milk (any kind)

1 teaspoon baking powder

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon black pepper

Instructions

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or spray lightly with cooking spray.
