Ingredients

1 cup granulated sugar

1 cup light corn syrup

1/4 cup water

1/4 tsp salt

1 tbsp vanilla extract

2 egg whites

1 cup semi-sweet chocolate chips

2 tbsp vegetable oil

1 cup graham cracker crumbs

Instructions

Prepare the Pan: Grease an 8x8 inch square baking pan with cooking spray and line it with parchment paper, allowing some overhang for easy removal later.

    Make the Marshmallow Base: In a saucepan over medium heat, combine the granulated sugar, corn syrup, water, and salt. Stir until the sugar dissolves, then bring the mixture to a boil. Avoid stirring at this stage and let it boil until it reaches the soft ball stage (about 240°F/115°C). Use a candy thermometer for accuracy.

      Whip the Egg Whites: While the sugar mixture is boiling, place the egg whites in a mixing bowl and whip them with an electric mixer until they form stiff peaks.

        Combine Sugar Mixture with Egg Whites: Once the sugar mixture has reached the right temperature, carefully pour it into the whipped egg whites while continuing to beat. Add the vanilla extract. Beat on high speed until the mixture cools and thickens, about 8-10 minutes.

          Assemble the Scotchmallows: Pour the marshmallow mixture into the prepared baking pan and spread it evenly with a spatula. Let it set at room temperature for about 4 hours or until firm.

            Coat the Marshmallows: Once the marshmallow is set, cut it into squares. In a microwave-safe bowl, melt the chocolate chips and vegetable oil together in 30-second intervals, stirring until smooth. Dip each marshmallow square into the chocolate to coat completely and then roll in graham cracker crumbs for that signature Scotchmallow taste.

              Set and Enjoy: Place the coated marshmallows on a wax paper-lined tray to cool and set completely. Once set, enjoy your delicious homemade Scotchmallows!
