1/2 cup diced red onion

1/2 cup diced bell pepper (any color)

1/2 teaspoon chili powder

1/2 teaspoon cumin

Salt and pepper to taste

1/4 cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

1/4 cup crumbled cotija cheese (optional)

Instructions

Sauté Veggies: In a large skillet over medium heat, add a splash of water or a drizzle of olive oil. Toss in the diced red onion and bell pepper. Sauté for about 5 minutes until they are softened.

Add Chicken and Corn: Stir in the shredded rotisserie chicken and thawed corn. Cook for another 3-4 minutes, just until heated through.
