  • 1 can black beans thoroughly rinsed and drained
  • 1 can diced tomatoes in juice
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 jalapeño pepper finely chopped seeds removed for milder flavor
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and freshly ground black pepper to taste
  • 2 cups vegetable or chicken broth
  • Fresh cilantro leaves for garnish

Instructions

  • Heat a drizzle of oil in a large pot over medium heat and sauté the chopped onion for about 5 minutes until soft.
