Ingredients

6 large eggs

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup celery, finely chopped

1/4 cup red onion, finely chopped

2 tablespoons sweet pickle relish (optional)

4 slices of whole grain bread (or your preferred bread)

Lettuce leaves for garnish

Tomato slices for garnish

Instructions

Boil the Eggs: Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium heat. Once boiling, cover with a lid, remove from heat, and let sit for 12 minutes.

    Cool the Eggs: After 12 minutes, transfer the eggs to a bowl of ice water to cool for about 5 minutes. This makes them easier to peel.

      Prepare the Egg Mixture: Once cooled, peel the eggs and chop them into small pieces. In a mixing bowl, combine the chopped eggs with mayonnaise, Dijon mustard, dill, lemon juice, salt, pepper, celery, red onion, and sweet pickle relish (if using).

        Mix Well: Gently stir the mixture until all the ingredients are thoroughly combined. Taste and adjust seasoning if necessary.

          Assemble the Sandwich: Toast the slices of bread if desired. Place a generous scoop of the egg salad mixture onto one slice of bread. Add lettuce and tomato slices, then top with another slice of bread.

            Serve: Cut the sandwich in half and serve immediately, or wrap in plastic wrap and refrigerate for later consumption.
