Ingredients

  • 2 cups heavy cream
  • 1 cup eggnog
  • 4 large egg yolks
  • ½ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon freshly grated nutmeg
  • a pinch sea salt

Instructions

  • Preheat your oven to 325°F (160°C).
  • Combine heavy cream and eggnog in a saucepan over medium heat until simmering, then remove from heat.
  • Whisk egg yolks, ½ cup sugar, vanilla, nutmeg, and salt in a bowl until smooth.
  • Slowly drizzle warm cream mixture into egg yolk mixture while whisking to temper the yolks.
  • Strain the mixture through a fine-mesh sieve into a measuring cup or bowl.
  • Pour the custard into ramekins and place them in a baking dish with hot water halfway up the sides.
  • Bake for 30-35 minutes until edges are set and centers jiggle slightly.
  • Cool to room temperature, then refrigerate for at least 2 hours.
  • Sprinkle sugar on top of each custard and caramelize with a kitchen torch or broiler.
  • Let sit for a minute before serving.

Notes

Chill the custard for at least 2 hours for the best texture.
