Ingredients

500g lamb (or beef), cut into chunks

4 cups water

2 cups basmati rice, rinsed

5 large garlic cloves, minced

1 large onion, chopped

1 teaspoon cumin powder

1 teaspoon coriander powder

1 teaspoon paprika

1/2 teaspoon allspice

Salt and pepper, to taste

6 tablespoons vegetable oil

2 tablespoons butter

1 cup chickpeas, cooked (or canned)

2 large loaves of Egyptian baladi bread, torn into pieces

1/4 cup fresh parsley, chopped (for garnish)

1/2 cup pomegranate seeds (for garnish, optional)

1 lemon, cut into wedges (for serving)

Instructions

Prepare the Meat: In a large pot, add the lamb chunks and cover with water. Bring to a boil, then reduce heat and simmer for about 1.5 hours, or until meat is tender. Skim the foam that may form on the surface.

    Season the Broth: Once the meat is tender, remove the pieces and set aside. Keep the broth on low heat and add chopped onion, minced garlic, cumin, coriander, paprika, allspice, salt, and pepper. Let it simmer for an additional 10-15 minutes for flavor infusion.

      Cook the Rice: In a separate pot, heat 3 tablespoons of oil over medium heat. Add the rinsed basmati rice and stir for about 2 minutes until slightly toasted. Pour in 4 cups of the prepared meat broth and bring to a gentle boil. Cover and reduce heat to low, cooking for about 15-20 minutes until the rice is fluffy and cooked through.

        Prepare the Bread: While the rice is cooking, heat the remaining oil in a large pan. Add the torn pieces of baladi bread and toast them until golden brown and crispy. Set aside on a paper towel to drain excess oil.

          Combine Ingredients: In a serving dish, layer the crispy bread at the bottom. Top it with the cooked rice, then arrange the tender pieces of meat on top. Drizzle some of the remaining broth over the entire dish, soaking the bread slightly.

            Finish with Chickpeas: Scatter the cooked (or canned) chickpeas over the meat and rice. For a final touch, melt the butter and drizzle it over the top.

              Garnish and Serve: Sprinkle chopped parsley and pomegranate seeds on top for color and flavor. Serve with lemon wedges on the side for a zesty finish.
