Ingredients

2 cups all-purpose flour

1 teaspoon instant yeast

1 teaspoon salt

1 tablespoon sugar

¾ cup lukewarm water

2 tablespoons olive oil (plus more for brushing)

½ cup sesame seeds

1 tablespoon molasses (or honey)

1 tablespoon cold water

Instructions

In a mixing bowl, combine the flour, yeast, salt, and sugar. Mix well to distribute the ingredients evenly.

    Gradually add the lukewarm water and olive oil to the dry ingredients. Stir until a shaggy dough forms.

      Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic.

        Place the dough in a lightly greased bowl, cover it with a damp towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

          Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

            Once the dough has risen, punch it down and divide it into 8 equal pieces.

              Roll each piece into a long rope (about 12 inches long) and twist it into a circle to form the simit shape, pinching the ends to secure them.

                In a small bowl, mix molasses with cold water to create a glaze. Dip each simit into the glaze, then roll it in sesame seeds until evenly coated.

                  Place the coated simits on the prepared baking sheet and brush the tops lightly with olive oil.

                    Bake in the preheated oven for 15-20 minutes, or until golden brown.

                      Allow the simits to cool slightly before serving. Enjoy them warm as a delightful snack or with your favorite dips!
