Ingredients

4 whole English muffins, split in half

1 cup marinara sauce (or pizza sauce)

1 cup shredded mozzarella cheese

4 large eggs

1/2 cup diced bell peppers (mixed colors)

1/2 cup cooked and crumbled breakfast sausage (or bacon)

1/4 cup sliced black olives (optional)

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil or parsley for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Muffins: Place the split English muffin halves on a baking sheet, cut side up. Drizzle with olive oil and lightly sprinkle with salt.

      Spread the Sauce: Spoon about 2 tablespoons of marinara sauce onto each muffin half, spreading it evenly.

        Add Toppings: Sprinkle shredded mozzarella cheese over the sauce on each muffin. Evenly distribute the diced bell peppers, crumbled sausage, and olives (if using) over the cheese.

          Add Eggs: Carefully crack one egg on top of each muffin half. It’s okay if some of the egg white spills over the sides.

            Season: Sprinkle a pinch of Italian seasoning, and add salt and pepper to taste over the eggs.

              Bake: Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the egg whites are set, and the yolks are just slightly runny (adjust the time for firmer yolks).

                Garnish and Serve: Remove from the oven and let cool for a minute. Garnish with fresh basil or parsley before serving.
