Ingredients

2 cups all-purpose flour

1 ½ teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

½ teaspoon salt

1 cup unsalted butter, softened

1 ¼ cups brown sugar, packed

½ cup granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

1 cup grated carrots

1 cup diced apples (preferably Granny Smith)

½ cup chopped walnuts or pecans (optional)

For Frosting:

1 cup cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

2 teaspoons vanilla extract

1 teaspoon apple cider vinegar (for tang)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients: In a large bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Whisk together until well blended.

      Cream Butter and Sugars: In another large bowl, use an electric mixer to cream the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3 minutes.

        Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.

          Combine Wet and Dry Ingredients: Gradually add the dry mixture to the creamed mixture, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined.

            Fold in Fruits and Nuts: Gently fold in the grated carrots, diced apples, and chopped nuts (if using).

              Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes before transferring to wire racks.

                Prepare the Frosting: In a medium bowl, beat together the softened cream cheese and butter until creamy. Gradually mix in the powdered sugar, vanilla extract, and apple cider vinegar, beating until smooth and fluffy.

                  Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on the top. Place the second layer on top and frost the top and sides of the cake.

                    Decorate: Optionally, you can garnish the top with extra walnuts, diced apples, or a sprinkle of cinnamon.
