Ingredients

  • 1 pound ground beef
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup enchilada sauce
  • 8 small flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Fresh cilantro chopped (for garnish, optional)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, add the ground beef and cook until browned.
  • Drain any excess fat from the skillet and stir in black beans, corn, cumin, garlic powder, salt, and pepper.
  • Cook the mixture for an additional 2-3 minutes until heated through.
  • Spread ½ cup of enchilada sauce evenly across the bottom of a 9x13 inch baking dish.
  • Place a small amount of the beef mixture down the center of each tortilla, sprinkle with cheese, roll tightly, and place seam-side down in the dish.
  • Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
  • Cover with aluminum foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes.
  • Allow to cool for a few minutes before serving and garnish with cilantro if desired.

Notes

For added flavor, serve with sour cream or guacamole.
