Ingredients

2 cups granulated sugar

1/2 cup unsweetened cocoa powder

1/2 cup unsalted butter

1/2 cup whole milk

2 cups semi-sweet chocolate chips

1 cup mini marshmallows

1 teaspoon vanilla extract

1 cup chopped nuts (optional, such as walnuts or pecans)

A pinch of salt

Instructions

Prepare the Pan: Line an 8x8 inch square baking dish with parchment paper, leaving some overhang for easy removal later. Lightly grease the parchment.

Cook the Sugar Mixture: In a medium saucepan, combine the granulated sugar, cocoa powder, unsalted butter, and whole milk. Cook over medium heat, stirring constantly until the mixture is smooth and begins to boil.

Boil and Stir: Once boiling, stop stirring and allow it to boil for exactly 4-5 minutes without stirring. The mixture should reach a soft-ball stage (approx. 234°F or 112°C) on a candy thermometer.

Mix in Chocolate: Remove the saucepan from the heat and immediately add the semi-sweet chocolate chips, mini marshmallows, vanilla extract, chopped nuts (if using), and the pinch of salt. Stir until everything is melted and evenly combined.

Pour into the Pan: Pour the fudge mixture into the prepared baking dish, spreading it evenly with a spatula.

Chill: Allow the fudge to cool at room temperature for about 2 hours or until set. For a quicker method, you can place it in the refrigerator for about 1 hour.

Cut and Serve: Once set, lift the fudge out of the pan using the parchment overhang. Cut it into squares or rectangles. Serve and enjoy!
