2 boneless, skinless chicken thighs

2 tablespoons chili paste (adjust for desired heat)

1 tablespoon soy sauce

1 tablespoon sesame oil

4 cups chicken broth

2 packs of instant ramen noodles (discard the seasoning packets)

2 cups fresh spinach

1 cup sliced mushrooms (shiitake or button)

2 green onions, chopped

3 cloves garlic, minced

1/2 cup heavy cream

1 tablespoon butter

Salt and pepper to taste

Sriracha for drizzling (optional)

Instructions

Marinate the Chicken: In a bowl, mix together chili paste, soy sauce, and sesame oil. Add chicken thighs, ensuring they're well coated in the marinade. Cover and let it sit for at least 30 minutes in the refrigerator.

    Cook the Chicken: Heat a skillet over medium heat. Remove chicken from the marinade and sear in the hot skillet for about 5-7 minutes on each side, or until cooked through and no longer pink. Remove from heat, let rest, and then slice into strips.

      Prepare the Broth: In a large pot, bring the chicken broth to a simmer. Add the chopped garlic and cook for 1-2 minutes until fragrant.

        Add Vegetables: Stir in the sliced mushrooms and spinach. Allow them to cook for about 3-5 minutes until the spinach has wilted and the mushrooms have softened.

          Cook Ramen Noodles: Add the ramen noodles to the broth and cook according to package instructions (usually about 3-4 minutes).

            Make the Creamy Garlic Sauce: In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Pour in the heavy cream, stirring continuously until the sauce thickens slightly. Season with salt and pepper to taste.

              Assemble the Bowl: In a deep bowl, place a serving of ramen noodles and ladle the broth and vegetables over them. Top with sliced chicken, a drizzle of creamy garlic sauce, and a sprinkle of chopped green onions.
