Ingredients

  • 1 lb boneless skinless chicken breasts, diced
  • 1 can black beans thoroughly drained and rinsed
  • 1 cup corn kernels
  • 1 cup assorted bell peppers sliced
  • 1 small onion finely diced
  • 1 packet fajita seasoning blend
  • 1 cup shredded cheese
  • 1 cup salsa
  • 6 whole wheat tortillas cut into strips
  • Olive oil for sautéing

Instructions

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat and sauté the diced chicken for 5-7 minutes until browned.
  • Add diced onion and sliced bell peppers to the skillet and cook for another 3-4 minutes.
  • Sprinkle fajita seasoning over the mixture and stir to coat evenly.
  • In a large bowl, combine black beans, corn, salsa, and tortilla strips, then fold in the chicken mixture.
  • Transfer the mixture to a greased 9x13 inch casserole dish and spread evenly.
  • Sprinkle shredded cheese on top to cover the casserole.
  • Bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly.
  • Allow to cool for a few minutes before serving.
  • Garnish with chopped cilantro or avocado slices before serving.
