Ingredients

1 cup canned pumpkin puree

1/2 cup natural almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/2 cup chocolate chips (optional)

1/4 cup chopped walnuts or pecans (optional)

Instructions

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    In a large mixing bowl, combine the pumpkin puree, almond butter, honey (or maple syrup), eggs, and vanilla extract. Whisk until smooth and well combined.

      In a separate bowl, mix together the baking soda, cinnamon, nutmeg, ginger, and salt.

        Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay!

          If using, fold in the chocolate chips and chopped nuts until evenly distributed.

            Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.

              Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

                Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
