Ingredients

For the Fluffy Pancakes:

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

For the Homemade Custard Filling:

2 cups whole milk

3 large egg yolks

1/4 cup sugar

2 tablespoons cornstarch

1 teaspoon vanilla extract

A pinch of salt

Instructions

Step 1: Prepare the Custard Filling

    In a medium saucepan, heat 1 and 3/4 cups of the milk over medium heat until it begins to steam. Don't let it boil.

      In a separate bowl, whisk together the egg yolks and sugar until smooth. Add the cornstarch and salt, mixing until well combined.

        Slowly pour the hot milk into the egg mixture while whisking constantly to temper the eggs. Return the mixture to the saucepan.

          Cook over medium heat, stirring constantly until the custard thickens and starts to bubble, about 5 minutes.

            Remove from heat and stir in the remaining 1/4 cup of milk and vanilla extract. Let it cool, then cover with plastic wrap to prevent a skin from forming.

              Step 2: Make the Fluffy Pancakes

                In a large bowl, combine flour, sugar, baking powder, and salt.

                  In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.

                    Pour the wet ingredients into the dry ingredients and mix gently until just combined. (Lumps are okay; do not overmix!)

                      Heat a non-stick skillet or griddle over medium heat and lightly grease with a bit of butter or oil.

                        Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles appear on the surface and the edges look set, about 2-3 minutes. Flip and cook on the other side until golden brown, another 1-2 minutes.

                          Step 3: Assemble and Serve

                            Once the pancakes are cooked, stack them on a plate.

                              Take a piping bag or a squeeze bottle filled with the homemade custard filling and pipe or squeeze it between two pancakes.

                                Optionally, serve with maple syrup, fresh berries, or a dusting of powdered sugar.
