Ingredients

1 cup water

1/2 cup unsalted butter

1/4 teaspoon salt

1 cup all-purpose flour

4 large eggs

1 teaspoon vanilla extract

1 tablespoon sugar

Oil for frying (such as vegetable or canola oil)

For the glaze:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions

Prepare the dough: In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat. Once boiling, add the flour all at once, stirring vigorously with a wooden spoon until the mixture forms a smooth ball that pulls away from the sides of the pan. Remove from heat and allow it to cool for about 5 minutes.

    Incorporate eggs: Add the eggs one at a time, thoroughly mixing each addition until fully incorporated before adding the next. The dough should be smooth and somewhat glossy. Stir in the vanilla extract and sugar.

      Heat the oil: In a deep pot or fryer, heat about 2-3 inches of oil to 350°F (175°C).

        Pipe the crullers: Transfer the dough into a piping bag fitted with a star tip. Pipe 4-inch long strips onto parchment paper or directly into the hot oil, forming a ring by joining the ends together.

          Fry the crullers: Carefully place the crullers into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes on each side or until golden brown. Remove with a slotted spoon and drain on paper towels.

            Make the glaze: In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust consistency with more milk if necessary.
