Ingredients

4 slices of thick-cut bacon

2 large eggs

2 slices of whole grain or sourdough bread

1 medium tomato, sliced

2 leaves of crisp romaine lettuce

1 tablespoon mayonnaise

Salt and pepper to taste

A dash of hot sauce (optional)

Butter for frying

Instructions

Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain excess grease.

    Fry the Eggs: In the same skillet with a tablespoon of the bacon fat, crack the eggs and season with salt and pepper. Fry for about 2-3 minutes until the whites are cooked but the yolks are still runny, or cook longer if desired.

      Toast the Bread: While the eggs are cooking, toast the slices of bread in a toaster or another skillet until golden and crispy. If desired, spread a bit of butter on the toast for extra flavor.

        Assemble the Sandwich: Spread mayonnaise on one side of each slice of toast. Layer the crispy bacon on top of one slice, followed by slices of fresh tomato, lettuce, and then the fried egg. If you’re using hot sauce, drizzle it over the egg.
