Ingredients

8 small soft corn tortillas

1 cup strawberries, diced

1 cup mango, diced

1 cup kiwi, diced

1 cup pineapple, diced

1 cup blueberries

1 tablespoon honey

1 tablespoon fresh lime juice

1 teaspoon vanilla extract

½ cup coconut yogurt (or regular yogurt)

Fresh mint leaves for garnish

Lime wedges for serving

Instructions

In a large mixing bowl, combine the diced strawberries, mango, kiwi, pineapple, and blueberries.

    In a separate small bowl, whisk together the honey, fresh lime juice, and vanilla extract. Pour this mixture over the diced fruits and gently toss until thoroughly combined.
