Ingredients

2 tbsp cumin seeds

2 tbsp coriander seeds

1 tbsp black peppercorns

1 tbsp cardamom pods

1 tsp cloves

1 tsp cinnamon sticks (broken into smaller pieces)

1 tsp nutmeg (grated)

1 tsp dried bay leaves (crushed)

Instructions

Toast the Spices: In a medium skillet over medium heat, add cumin seeds, coriander seeds, and black peppercorns. Toast them for about 2-3 minutes, stirring constantly until fragrant. Remove from heat and let them cool slightly.

    Add Remaining Spices: In the same skillet, add the cardamom pods, cloves, broken cinnamon sticks, and crushed bay leaves. Continue to toast these spices for another 1-2 minutes until they release their aromatic oils.

      Grind the Mixture: Allow the mixture to cool completely. Once cool, transfer all the toasted spices into a spice grinder or mortar and pestle. Add the grated nutmeg. Grind the mixture to a fine powder.

        Store: Transfer your freshly ground Garam Masala into an airtight container. Store it in a cool, dry place away from sunlight.
