Ingredients

  • 2 ripe mangoes peeled and cut into small cubes
  • 1 cup fresh spinach leaves thoroughly rinsed
  • ½ cup fresh mint leaves gently washed
  • 1 tablespoon honey
  • 1 juice of lime
  • 2 cups chilled water
  • ice cubes optional for serving
  • fresh mint sprigs for garnish

Instructions

  • In a high-speed blender, add the diced mangoes, spinach leaves, mint leaves, honey, lime juice, and chilled water.
  • Blend on high until smooth and well combined.
  • Taste and add more honey if desired for sweetness.
  • Strain through a fine sieve or cheesecloth into a pitcher to eliminate pulp.
  • Chill in the refrigerator for at least 30 minutes or serve immediately over ice.
  • Pour into glasses and garnish with a sprig of fresh mint.
