Ingredients

4 slices garlic bread (store-bought or homemade)

2 cups shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

2 tablespoons unsalted butter, softened

1 teaspoon garlic powder

1 teaspoon dried Italian herbs (oregano, basil, or a mix)

A pinch of salt

Fresh parsley for garnish (optional)

Instructions

Prepare the Garlic Butter: In a small bowl, mix the softened butter with garlic powder, dried Italian herbs, and a pinch of salt until well combined.

Assemble the Sandwich: Take two slices of garlic bread and spread a generous layer of the garlic butter mixture on one side of each slice. Place one slice butter-side down on a cutting board.

Add Cheese: Layer half of the mozzarella and half of the cheddar cheese evenly over the garlic bread slice. Top with the second slice of garlic bread, ensuring the buttered side is facing up.

Cook the Sandwich: Heat a grill pan or skillet over medium heat. Once hot, carefully place the assembled sandwich in the pan. Cook for about 3-4 minutes or until the bottom is golden brown and crispy.

Flip and Cook: Using a spatula, carefully flip the sandwich over. Cook for another 3-4 minutes until the cheese is melted and the second side is golden brown.

Repeat: If you want to make a second sandwich, repeat the assembly and cooking steps.

Serve: Remove the grilled cheese from the skillet and let it cool for a minute. Slice it in half, garnish with fresh parsley if desired, and serve hot with your favorite soup or dip!
