Ingredients

1 lb steak (sirloin or ribeye), cut into bite-sized pieces

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves of garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

Salt and pepper, to taste

2 tablespoons olive oil

½ teaspoon red pepper flakes (optional)

Fresh parsley, chopped for garnish

Instructions

Prepare the Potatoes: In a medium pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.

    Sear the Steak: In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, add the steak pieces (seasoned with salt and pepper) in a single layer. Sear for about 3-4 minutes until browned on one side, then flip and cook for an additional 2-3 minutes until desired doneness. Remove the steak from the skillet and set aside.

      Cook the Potatoes: In the same skillet, add the cooked potatoes. Sauté for 5-7 minutes, allowing them to get brown and crispy on the edges.

        Make the Garlic Butter: Push the potatoes to the side of the skillet. In the empty space, add the butter, minced garlic, thyme, rosemary, and red pepper flakes (if using). Allow the butter to melt, stirring the garlic until fragrant (about 1-2 minutes).

          Combine Ingredients: Return the steak to the skillet and toss everything together gently to coat the steak and potatoes with the garlic butter mixture. Cook for an additional 2-3 minutes to heat everything through.

            Garnish and Serve: Remove from heat, sprinkle with fresh parsley, and serve immediately.
