Ingredients

1 lb (450g) sirloin steak, cut into bite-sized cubes

2 cups baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for the potatoes.

    Prepare the Potatoes: In a mixing bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out in a single layer on the prepared baking sheet. Roast in the oven for about 25–30 minutes, turning halfway through, until golden and crispy.

      Sear the Steak Bites: While the potatoes are roasting, season the steak cubes generously with salt and pepper. In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the steak bites in a single layer (you may need to do this in batches). Sear for about 2–3 minutes on each side until browned and cooked to your desired level of doneness. Remove the steak from the skillet and set aside.

        Make the Garlic Butter: In the same skillet, lower the heat to medium and add the butter. Once melted, stir in the minced garlic, rosemary, and thyme. Cook for about 1–2 minutes until the garlic is fragrant, ensuring it doesn’t burn.

          Combine Steak and Butter: Return the seared steak bites to the skillet, tossing them in the garlic butter until well coated. Cook for an additional 1 minute to enhance the flavor.

            Serve: Once the potatoes are finished roasting, remove them from the oven and add them to the skillet with the steak bites. Gently toss to combine. Adjust seasoning with more salt and pepper if needed.

              Garnish and Enjoy: Transfer the steak bites and potatoes to a serving platter, sprinkle with fresh parsley, and serve hot.
