1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: In a large mixing bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet in a single layer and roast in the preheated oven for about 20-25 minutes, or until golden brown and fork-tender.

      Cook the Steak Bites: While the potatoes are roasting, heat the remaining olive oil in a large skillet over medium-high heat. Season the steak cubes with salt and pepper.
