Ingredients

1 lb (450g) sirloin steak, cut into bite-sized cubes

1 lb (450g) baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

1 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Potatoes:

    - In a pot, add the halved baby potatoes and cover them with salted water. Bring to a boil and cook for about 10-12 minutes or until tender. Drain and set aside.

      Cook the Steak Bites:

        - In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

          - Season the steak cubes with salt, pepper, and paprika. Add them to the hot skillet in a single layer, ensuring they are not overcrowded.

            - Sear the steak bites for 2-3 minutes on each side until they are browned but still medium-rare (cook longer if you prefer them more done). Remove the steak from the skillet and set aside.

              Make the Garlic Butter:

                - In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic, chopped rosemary, and thyme. Sauté for about 1-2 minutes until fragrant (be careful not to burn the garlic).

                  Combine Potatoes and Steak:

                    - Add the cooked potatoes to the skillet with the garlic butter mixture. Toss the potatoes to coat them well and allow them to sauté for an additional 2 minutes.

                      - Gently fold in the seared steak bites and toss everything together until heated through.

                        Serve:
