Ingredients

For the Steak:

2 ribeye steaks (about 1-inch thick)

Salt and pepper, to taste

3 tablespoons unsalted butter

5 cloves garlic, crushed

2 sprigs fresh rosemary (or thyme)

For the Creamy Mash:

4 large Yukon Gold potatoes, peeled and cubed

1/2 cup heavy cream

4 tablespoons unsalted butter

Salt and pepper, to taste

1/2 cup grated Parmesan cheese (optional)

Chives, chopped (for garnish)

Instructions

Prepare the Potatoes:

    - In a large pot, add the cubed potatoes and cover them with cold water. Add a pinch of salt and bring to a boil. Lower the heat to a simmer and cook until tender, about 15-20 minutes.

      Make the Creamy Mash:

        - Drain the potatoes and return them to the pot. Add the heavy cream, butter, salt, and pepper. Mash until smooth and creamy. If desired, stir in the grated Parmesan cheese for extra richness.

          - Keep warm while you prepare the steak.

            Cook the Steak:

              - Season the steaks generously with salt and pepper on both sides.

                - In a large skillet or cast-iron pan, heat 2 tablespoons of butter over medium-high heat until melted and bubbly.

                  - Add the steaks to the skillet and sear for 4-5 minutes without moving them. Flip the steaks and add the crushed garlic and rosemary.

                    - Use a spoon to baste the melted butter over the steaks as they cook. Cook for an additional 3-5 minutes, depending on your preferred doneness (medium-rare should be around 130-135°F).

                      Rest and Serve:

                        - Remove the steaks from the skillet and let them rest for about 5 minutes. This allows the juices to redistribute.

                          - Serve the steak alongside the creamy mash and spoon the garlic butter from the skillet over the top for extra flavor.

                            - Garnish with chopped chives, if desired.
