Ingredients

1 lb baby potatoes, halved

2 large carrots, peeled and sliced into rounds

2 medium zucchinis, sliced into half-moons

4 cloves garlic, minced

4 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the halved baby potatoes, sliced carrots, and zucchini.

Drizzle the olive oil over the vegetables and add the minced garlic, dried thyme, dried rosemary, paprika, salt, and pepper.

Toss everything together until the vegetables are well coated in oil and herbs.

Spread the seasoned vegetables out evenly on the prepared baking sheet, ensuring they are in a single layer for even roasting.

Roast in the preheated oven for 25-30 minutes or until the potatoes are golden brown and tender, tossing once halfway through the cooking time.

Once roasted, remove from the oven and sprinkle with fresh parsley before serving. Enjoy your flavorful dish!
