Ingredients

200g fresh mushrooms (cremini or button), sliced

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

Salt and pepper to taste

1 tablespoon balsamic vinegar

1 tablespoon fresh parsley, chopped (for garnish)

4 slices of rustic bread (sourdough or whole grain)

50g goat cheese or cream cheese (optional)

Instructions

Sauté the Mushrooms: In a skillet, heat the olive oil over medium heat. Add the sliced mushrooms and cook for about 5-7 minutes until they are golden brown and have released their moisture. Stir occasionally to ensure even cooking.

    Add Garlic and Herbs: Once the mushrooms are nicely browned, add the minced garlic and fresh thyme. Sauté for an additional 2-3 minutes, until the garlic is fragrant but not burnt.

      Season and Finish: Season the mixture with salt, pepper, and balsamic vinegar. Stir everything well and cook for another minute to allow the flavors to meld. Remove from heat.

        Toast the Bread: Meanwhile, preheat your oven to 200°C (400°F). Place the slices of bread on a baking sheet and brush them lightly with olive oil on both sides. Toast them in the oven for about 5-7 minutes, or until golden and crispy.

          Assemble the Toast: Spread a thin layer of goat cheese or cream cheese over the toasted bread (if using). Top with the garlic mushroom mixture evenly.
