Ingredients

  • 2 medium quinces peeled, cored, and diced
  • 1 tablespoon fresh ginger finely grated
  • 3 cups water
  • 2 tablespoons honey or maple syrup
  • 1 juice lemon
  • a pinch sea salt
  • for garnish fresh mint leaves

Instructions

  • In a medium-sized saucepan, combine the diced quinces, grated ginger, and water.
  • Place the saucepan over medium-high heat and bring the mixture to a vigorous boil.
  • Once it reaches a boil, lower the heat and allow the mixture to simmer gently for about 20-25 minutes.
  • After simmering, remove the saucepan from the heat and let the mixture cool for a few minutes.
  • Carefully strain the liquid into a bowl using a fine mesh strainer or cheesecloth.
  • Whisk in the honey or maple syrup, freshly squeezed lemon juice, and a pinch of sea salt.
  • Taste the elixir and adjust the sweetness to your liking.
